A well-balanced single pot still Irish whiskey, Redbreast 12 Year Old has been matured in a combination of bourbon and sherry casks, creating a sweet-and-spicy character. The nose holds aromas of sweet fruit, toasted oak and warm spices, and the palate offers notes of buttery hot-cross-buns, dried fruits, baking spices and spicy oak.
Slow-burning, aromatic peat from Hobbister Moor; hand turned floor maltings, Sherry seasoned European oak casks, cool maturation in the temperate island climate and a long and unhurried harmonisation process. Like the founder, Magnus Eunson, Highland Park shares the Viking ancestors’ commitment to skilled craftsmanship as well as their proud, independent spirit. With clear, bright, burnished gold tones, the flavour combinations offer a mix of cherries, dark chocolate, toffee, marzipan, heather honey and aromatic peat smoke. Best served with meaty fish like mahi mahi, or sword fish cooked with Indian spices, such as cardamom and ginger, cold meats with ginger chutney and citrus fruit puddings.
Jack Daniel’s is one of the most instantly recognisable names in whiskey, and with such an array of expressions on offer it was hard to single one out. The Single Barrel Rye is a major departure from traditional Jack recipes and its first new grain recipe in 150 years. The nose is nutty and sweet with notes of marzipan, the palate introduces citrus fruits with a dash of smoked oak, while the finish is long and peppery.
One of the first Japanese single malts to break into the UK market, Suntory's Yamazaki 12 Year Old continues to impress with its well-balanced fruity sweetness, something that appeals to novice and experienced whisky drinkers alike. Yamazaki 12 year Old is a pioneering malt in Japan, for which Suntory deserve great credit. In its early days, it was rounded and delicate...now it is more intense, confident and elegant.
Kweichow Maotaizhen's nine-year-old baijiu is made in the Guizhou province of China. An unflavoured moutai baijiu, this is made from a combination of wheat and sorghum (a type of grain), has been classified with a 'sauce' fragrance and has a similiar mouthfeel to vodka.
